At this point we thought refreshments would be welcome so why not take this opportunity to sample the delights of

Lockshen Pudding

Here is the recipe so there's no excuses

So its on with the chef's hat, pans at the ready and lets make a real table creaker!

 

Egg lockshen

Like your lockshen? Forget the packaged stuff and try our sensational simple recipe.

Ingredients

  • 6 eggs, beaten................................

  • Margarine for frying

  • Salt and pepper

  • Method

    Using a non stick frying pan,melt the margarine. Add salt and pepper to the beaten eggs to taste and pour into frying pan to make a thin pancake.

    Cook until set , then lay out to cool on kitchen paper.

    Once this method has been used on all the egg mixture,roll the pancake and cut across to form thin noodles.

    Keep covered until required to prevent drying out.

    Lockshen Pudding

    There's more to lockshen than the noodles that swim around in your soup.The proof is in the pudding!

    Ingredients

  • Egg Lockshen(see recipe above)

  • or use 1 box of broad noodles ..............

  • half lb. cooking cheese

  • half lb. cream cheese

  • 6oz. sugar

  • 2oz. raisins

  • 2 eggs

  • 3oz. butter

  • Method

    If using box noodles boil until soft, 15 minutes, and then leave to cool.

    Mix all ingrediants with noodles leaving some butter to melt in the bottom of the dish.

    Stir well and pour into prepared dish.

    Bake in oven gas mark 4, 350 degrees F for about 30-40 minutes.

    Can be served hot or cold.
